Amy Brace knows that if there’s one thing people love, it’s sweets. In 2011, Brace started baking cupcakes and other treats out of her home kitchen. Several years later, she decided it was time to expand her business. She opened her storefront bakery this summer.
Amy’s Cupcake Shoppe is located in downtown Hopkins and offers everything from gourmet cupcakes and French macarons to cupcake parfaits, custom-designed sugar cookies and birthday and wedding cakes. Open Tuesday through Saturday, the shop is known for its themed days of the week (like Waffle Wednesday). If you’re looking for a quaint spot to enjoy a Saturday morning, you can find fresh, warm, gooey cinnamon rolls at the shop. They also serve City Girl Coffee from Duluth.
Brace is looking forward to making seasonal treats, too. “We want to do Thanksgiving pies, Christmas and Hanukkah cookies, and Valentine’s Day cakes and cupcakes. We also had some state fair-themed cupcakes, which were a huge success,” Brace says.
