Kim Cassens’ Minnetonka Bakery Serves Up Delicious Bundts for All Occasions

When Kim Cassens stopped by Eden Prairie’s Nothing Bundt Cakes bakery in 2014 to buy a cake for her daughter-in-law’s bridal shower, she never imagined she would someday own her own franchise. Yet the bakery’s nostalgic look and décor was exciting, and “the cake was fabulous,” she says.

After shopping around for possible locations, her Minnetonka branch of the national chain opened in July 2015, and business has been booming ever since.

Her chocolate/chocolate chip cake is a No. 1 seller, and Cassens also recommends the Bundtinis: Sold by the dozen like cupcakes, Bundtinis are perfect because customers can mix and match flavor pairings. “They’re a quick, easy pick-up-and-go item,” Cassens says.

Nothing Bundt Cakes offers cake plates, balloons, candles and other party-hosting essentials—and Cassens also stocks Minnesota-themed towels, mugs and baby items made by local artisans.
