This spring, Minnetonka’s Lakewinds Food Co-op opened its fresh burrito bar, a welcome addition to the popular deli and to-go section of the store. We stopped by during a bustling lunch hour to taste for ourselves, and we weren’t disappointed. Visitors step up to the counter and order their custom dish, which can come as a tortilla wrap or as a fresh rice or lettuce bowl. Filling options include barbacoa beef, pork carnitas, chicken tinga and roasted vegetables—not to mention the plethora of delicious toppings, from queso fresco to red onion cilantro salsa to (our favorite) roasted poblano pepper crema. Like most things at Lakewinds, the burritos are stuffed with locally raised meats, organic veggies and from-scratch toppings. Ready to say adios to your sad turkey sandwich?
