Mark Palm’s relatives started a restaurant equipment supply company in 1910. Today, Palm and his brothers work in the restaurant business and nearly all live in the lake area, running Chameleon Concessions, building food trucks. Palm’s business morphed from crafting food stands at Home Depot to building food trucks for local food joints such as Psycho Suzi’s. He also caters in the lake area in his own vehicle, dishing out hot dogs, sloppy Joes and ice cream. What’s his favorite part? “The variety that comes to me menu to menu and customer to customer,” Palm says. “The clients themselves have such character to them—it’s fun.”
